Photosensitive and tightly grained cherry makes a very classy and superior end grain chopping surface, any size. Slightly more expensive than either plain or ambrosia maple, but very stunning in color and grain. Very generally speaking, for cherry in END GRAIN construction I charge approximately $45-55/BF, where one board foot is 12" x 12" x 1" thick.
